Whole red lentils are rich in protein and fibre and make a great addition to salads, soups and nourishing dahl. 

For a slightly crunchier texture cook for approx. 20 minutes or for a creamier texture keep cooking until the lentils have broken down more (approx. 25-30 mins). Soak the lentils overnight to minimise cooking times.
