Organic coconut flour makes a great gluten free flour. It can replace any wheat based flour in all aspects of baking, but for best results can be combined with another gluten free flour such as buckwheat or quinoa.
Due to its higher fat and fibre content, coconut flour is highly satiating and quite energy dense so you won't need as much.
You generally want to substitute 1/4 cup to 1/3 cup coconut flour for 1 cup grain-based flour, there are tonnes of tried and tested recipes so you don't have to do the math. Coconut flour also tends to absorb a lot of liquid so you may need to adjust these ratios as well.
