The Mount Zero Biodynamic Falafel Mix is a traditional Middle Eastern recipe made with organic chickpeas from the Wimmera.
The dry ingredients are simply; ground chickpeas, cumin and coriander seed, so that all that is required is to add water, a diced onion & parsley.
How to make:
Place 1 cup of Falafel Mix in Food Processor with half an onion, a handful of parsley, coriander or mint and add 3/4 of a cup of water. Blend well.
Allow to sit for 15 minutes. Press firmly together into walnut sized spoonfuls and fry gently in oil, turning when golden. Serve with yoghurt, hummus or garlic sauce.
To 1 cup of above mix add 2 cups grated cauliflower, and a little more water if the mix seems crumbly.
Falafel is traditionally served in pita bread sandwiches. Cut a pita pocket in half and fill with falafel balls, slices of cucumber, tomato, red onion, chopped parsley and mint, then drizzle the fillings with the following sauce:
125 ml plain yoghurt
3 tbsp tahini paste
½ tsp garlic – finely chopped
2 tsp lemon juice
Salt and pepper to taste
Mix together and add little water to make a smooth sauce.
Season with salt and pepper
