Zucchini, Dill & Fetta Fritters

Ingredients:

4 zucchinis, grated or put through food processor

1 cup frozen green peas

½ cup fresh chopped dill

¼ cup nutritional yeast

½ cup almond meal

3 cubes Meredith goats fetta, crumbled into smaller pieces

5 eggs

 

Method:

Place the zucchinis, peas, dill, almond meal, nut yeast & fetta in a large bowl & mix these gently together

In another bowl, crack the eggs and lightly beat with a fork

Add the eggs to the zucchini mixture and combine

Heat ¼ TBSP ghee in a pan on medium to high heat

Place small handful of mixture onto pan, this amount of ghee cooks about 3 fritters at a time

Add more ghee as you go if you need it 

Cook until golden brown on both sides-  the mixture is a little soft so you need to be gentle when you flip them

Serve with a squeeze of lemon or your fave condiments. Also a really nutrient dense breakky/snack option for those who want something to grab on the run!
