Roasted Carrots topped with Tahini Dressing

2-3 bunches of heirloom carrots or slice whole carrots long ways

2-3 TBSP Extra virgin olive oil

Salt & pepper

¼ jar Tahini

½ cup Water

Black sesame seeds

Handful of Coriander, chopped

Squeeze of lemon Juice


  1. Pre-heat oven to 180degrees Celsius
  2. Wash carrots and place in baking tray in a single layer, drizzle with oil and a good pinch of salt and pepper
  3. Roast carrots until they are soft and have a little colour
  4. Meanwhile, pop tahini, salt & water in nutribullet or food processor- add more water if you need until you have a creamy, slightly runny consistency
  5. Get a nice dish or board, layer carrots and drizzle the tahini dressing over them
  6. Sprinkle with black sesame seeds, coriander & a squeeze of lemon juice
