Hazelnut Butter & Hemp Seed Cookies

Cookie ingredients

250g hazelnuts

Pinch of salt

1.5 tsp cacao powder

1/8 cup maple syrup

1 egg

½ tsp baking powder

1 tbsp hemp seeds

 

Vegan Chocolate ingredients

1 cup raw cacao powder

¼ cup melted coconut oil

¼ cup melted cacao butter

½ cup maple syrup

 

Method

  1. Preheat oven to 180degrees
  2. Roast hazelnuts in a baking tray in the oven until toasted (you should be able to smell it!), set a timer for 5 minutes and then check them to ensure they don’t burn
  3. Wait until they cool down and then rub them between your hands to get the skin off
  4. Place hazelnuts & pinch of salt in your food processor and blend until smooth and silky
  5. Combine the hazelnut butter, cacao powder, maple syrup, egg, baking powder and hemp seeds in a bowl and mix gently
  6. Take a small handful and roll into a ball depending on how small or big you want each cookie
  7. I used two fingers, but you could use a fork to gently push the cookies down into shape
  8. Sprinkle hemp seeds on top of each cookie
  9. Cook in oven for approximately 10 minutes, they will still feel quite soft after this but they will hold together and be delish and gooey

 

Prepare the vegan chocolate

  1. Place cacao butter in pot on a low heat and melt
  2. Add cacao powder & coconut oil in the pot and stir until smooth
  3. Turn off the heat and pour the maple syrup in. Whisk until the consistency is creamy and glossy
  4. Once cool, dip them in the chocolate you can half dip or dip the whole thing
  5. Place in fridge to let the chocolate harden

There will be chocolate left over, so to ensure it doesn’t go to waste you can pour it into some ice cubes or spread on some baking paper and sprinkle some seeds on it to snack on when the cookies run out :)

Enjoy and try not to eat them all at once!
